Ingredients
1 large avocado, diced
1 cup cherry tomatoes, halved
1 bunch scallions, sliced
4 cups carrots, spiralized
1 cucumber, spiralized
1 beet spiralized
4 radishes, spiralized
3 tbsps. lime juice
2 tbsps. olive oil
1 tbsp. chili powder
1 tbsp. lemon juice
ΒΌ tsp. chipotle powder
Salt to taste
Directions
- In a salad bowl, mix and arrange avocado, cherry tomatoes, scallions and all spiralized veggies. Set aside.
- In a small bowl, whisk lime juice, olive oil, chili powder, lemon juice, chipotle powder and salt thoroughly.
- Pour dressing over noodle salad. Toss and coat well.
- Serve and enjoy at room temperature.
