Ingredients

1 large avocado, diced
1 cup cherry tomatoes, halved
1 bunch scallions, sliced
4 cups carrots, spiralized
1 cucumber, spiralized
1 beet spiralized
4 radishes, spiralized
3 tbsps. lime juice
2 tbsps. olive oil
1 tbsp. chili powder
1 tbsp. lemon juice
ΒΌ tsp. chipotle powder
Salt to taste

Directions

  1. In a salad bowl, mix and arrange avocado, cherry tomatoes, scallions and all spiralized veggies. Set aside.
  2. In a small bowl, whisk lime juice, olive oil, chili powder, lemon juice, chipotle powder and salt thoroughly.
  3. Pour dressing over noodle salad. Toss and coat well.
  4. Serve and enjoy at room temperature.
