Ingredients
1 large carrot, peeled
3 c. shredded Napa cabbage
3 c. shredded Romaine lettuce
1 medium red bell pepper, thinly sliced
2 T. fresh basil leaves
2 c. rotisserie chicken, shredded
½ c. slivered almonds, toasted
¼ c. peanut oil
2 T. soy sauce
2 T. rice vinegar
Sea salt and black pepper, to taste
Directions
- In a large bowl, stir together cabbage, lettuce, bell pepper, basil, chicken, and toasted almonds.
- In a small bowl, whisk together the peanut oil, soy sauce, and vinegar until blended. Season with salt and black pepper, to taste.
- Pour the dressing over the salad and toss well. Serve immediately and enjoy!
