Ingredients

1 large carrot, peeled
3 c. shredded Napa cabbage
3 c. shredded Romaine lettuce
1 medium red bell pepper, thinly sliced
2 T. fresh basil leaves
2 c. rotisserie chicken, shredded
½ c. slivered almonds, toasted
¼ c. peanut oil
2 T. soy sauce
2 T. rice vinegar
Sea salt and black pepper, to taste

Directions

  1. In a large bowl, stir together cabbage, lettuce, bell pepper, basil, chicken, and toasted almonds.
  2. In a small bowl, whisk together the peanut oil, soy sauce, and vinegar until blended. Season with salt and black pepper, to taste.
  3. Pour the dressing over the salad and toss well. Serve immediately and enjoy!
