Ingredients
1 T. extra virgin olive oil
1 medium yellow onion, finely chopped
1 medium red bell pepper, finely chopped
1 15-oz. can refried beans
2 t. dried oregano
1 t. ground cumin
1 t. garlic powder
2 t. fresh lime juice
Sea salt and black pepper, to taste
6 flour tortillas (10” in diameter)
1 large tomato, finely chopped
6 oz. 4-Cheese Mexican Blend, finely shredded
Serve with: Salsa, guacamole, and/or sour cream, if desired
Directions
- Pre-heat oven to 350°F.
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook for 4-5 minutes, stirring frequently, until tender.
- Place refried beans, herbs, and fresh lime juice in a small bowl and combine with a fork. Season with salt and black pepper, to taste.
- Spread each tortilla with an equal amount of the bean mixture. Top with sautéed onions and bell peppers, fresh tomato, and shredded Mexican cheese blend.
- Roll up each tortilla and carefully place in an ungreased 9″ x 13” baking dish. Bake 10-12 minutes in pre-heated oven or until heated through and cheese is melted. Serve immediately with Spanish rice, if desired. Enjoy!
