Ingredients

1 T. extra virgin olive oil
1 medium yellow onion, finely chopped
1 medium red bell pepper, finely chopped
1 15-oz. can refried beans
2 t. dried oregano
1 t. ground cumin
1 t. garlic powder
2 t. fresh lime juice
Sea salt and black pepper, to taste
6 flour tortillas (10” in diameter)
1 large tomato, finely chopped
6 oz. 4-Cheese Mexican Blend, finely shredded

Serve with: Salsa, guacamole, and/or sour cream, if desired

Directions

  1. Pre-heat oven to 350°F.
  2. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook for 4-5 minutes, stirring frequently, until tender.
  3. Place refried beans, herbs, and fresh lime juice in a small bowl and combine with a fork. Season with salt and black pepper, to taste.
  4. Spread each tortilla with an equal amount of the bean mixture. Top with sautéed onions and bell peppers, fresh tomato, and shredded Mexican cheese blend.
  5. Roll up each tortilla and carefully place in an ungreased 9″ x 13” baking dish. Bake 10-12 minutes in pre-heated oven or until heated through and cheese is melted. Serve immediately with Spanish rice, if desired. Enjoy!
