Ingredients
3 c. old-fashioned rolled oats, uncooked
1 c. slivered almonds
½ c. raw sunflower seeds
¼ c. coconut oil, melted
3 T. pure maple syrup
2 t. vanilla extract
½ t. sea salt
¾ c. dried cherries
¼ c. coconut flakes, finely chopped
Optional: Greek or non-dairy yogurt and seasonal berries
Directions
- Preheat oven to 400°F and line a large rimmed baking sheet with a piece of parchment paper. Set aside.
- Add all ingredients, except for cherries and coconut, in a large bowl and mix until dry ingredients are lightly coated with coconut oil, maple syrup and vanilla extract.
- Spread the granola mixture into a thin layer on the prepared baking sheet and place in the pre-heated oven for 20-25 minutes, or until granola is golden brown. While baking, stir granola every 5-6 minutes with a wooden spoon so it browns evenly.
- Remove from oven and stir in the cherries and coconut while still warm. Allow the granola to cool down completely before serving with some Greek or non-dairy yogurt and fresh seasonal berries, if desired. Enjoy!
