Ingredients

3 c. old-fashioned rolled oats, uncooked
1 c. slivered almonds
½ c. raw sunflower seeds
¼ c. coconut oil, melted
3 T. pure maple syrup
2 t. vanilla extract
½ t. sea salt
¾ c. dried cherries
¼ c. coconut flakes, finely chopped

Optional: Greek or non-dairy yogurt and seasonal berries

Directions

  1. Preheat oven to 400°F and line a large rimmed baking sheet with a piece of parchment paper. Set aside.
  2. Add all ingredients, except for cherries and coconut, in a large bowl and mix until dry ingredients are lightly coated with coconut oil, maple syrup and vanilla extract.
  3. Spread the granola mixture into a thin layer on the prepared baking sheet and place in the pre-heated oven for 20-25 minutes, or until granola is golden brown. While baking, stir granola every 5-6 minutes with a wooden spoon so it browns evenly.
  4. Remove from oven and stir in the cherries and coconut while still warm. Allow the granola to cool down completely before serving with some Greek or non-dairy yogurt and fresh seasonal berries, if desired. Enjoy!
