Ingredients

6 6-oz. Pacific cod fillets
2 T. extra virgin olive oil,
Sea salt and black pepper, to taste
1 c. plain Greek yogurt
¼ c. honey
2 t. Dijon mustard
½ c. fresh lemon juice
¼ c. fresh chives, chopped, divided

Directions

  1. Preheat oven broiler to high. Spray a rimmed baking sheet or glass baking dish with non-stick cooking spray and set aside.
  2. Drizzle the cod fillets on both sides with olive oil and season with salt and black pepper, to taste. Arrange the fillets in a single layer on the prepared baking sheet or baking dish and broil until cooked through and the flesh flakes easily with a fork, about 6 to 8 minutes. Remove from oven and set aside to cool slightly.
  3. In a small bowl, mix together the Greek yogurt, honey, and Dijon mustard until smooth. Whisk in the lemon juice and 3 tablespoons fresh chives until smooth and season with salt and black pepper, to taste.
  4. Transfer the broiled fish to a serving platter and drizzle with the Greek yogurt sauce. Garnish remaining chopped chives and serve immediately. Enjoy!
