Important Note: Corn tortillas are naturally gluten free. However, some are made in facilities where products containing gluten are processed. It will usually indicate on the package if that’s the case. Always make sure to buy tortillas made from organic, nonGmo cornmeal.
Time Saving Tips:
- If Mexican or Tex-Mex dishes are popular in your house, make double or triple batches of the taco seasoning to have on hand. This mixture can be stored in an airtight container for several months.
- Assemble all ingredients and measuring spoons/cups on the counter before beginning.
- Heat large cast iron skillet over medium-high heat while the broiler warms up.
- Warm the tortillas while the steak is under the broiler.
Regular olive oil has a higher smoke point than extra virgin olive oil. Therefore, it is a better option for the high temperatures utilized here.
Tip: For best results, allow steaks to rest at room temperature for 30 minutes prior to cooking.
