Meatless Meals Menu Plan – Week 2

3 c. quinoa, cooked (note: 1 c. uncooked = approximately 3 c. cooked)
3 T. extra virgin olive oil
1½ t. ground cumin
¾ t. smoked paprika
¾ t. garlic powder
Sea salt and black pepper, to taste
3 sweet potatoes, peeled and diced
2 14.5 oz. black beans, rinsed and drained
2 c. frozen sweet corn, cooked according to package directions

Tip: Whenever collecting citrus zest, be sure to use organic fruit. To get more bang for your buck, zest the entire fruit and freeze any excess zest for future use. (You can also collect the remaining juice from each piece of fruit and store in ice cube containers along with the leftover zest).
