2 c. old-fashioned rolled oats
2 c. almond milk
2 medium Honeycrisp (or similar) applies, chopped
1 t. cinnamon
½ t. ground ginger
½ t. nutmeg
1 T. maple syrup
¼ c. pecans, chopped

Cook time: 25-30 minutes

Tip: For best results, use pure pumpkin instead of pumpkin pie filling for this recipe. This will give you more control over the amount of sugar and spices in your muffins.
