Summertime Vegetarian Menu Plan – Week 4
Ingredients
Non-stick cooking spray
2 c. old-fashioned oats
1 c. slivered almonds
¼ c. honey
1 T. coconut oil
1 t. kosher salt
1½ t. ground cinnamon

Ingredients
1 roll pre-made sugar cookie dough
1 c. white chocolate baking chips
1 8-oz. package cream cheese, softened
1 c. strawberry jam, no sugar added
3 c. fresh strawberries, sliced
6 oz. dark chocolate chips
Directions
- Preheat oven to 350°
- Press sugar cookie dough into a well-seasoned 10-inch cast iron skillet or a greased 9×13 inch pan.
- Bake cookie dough for 15-20 minutes, or until the dough is golden brown. Remove from oven and allow cookie to cool completely.
- In small microwave-safe glass bowl, melt white baking chips uncovered on high for 40 seconds. If they are not completely melted, continue microwaving 10 seconds at a time until they are.
- In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended and spread mixture over cookie crust.
- Combine sliced strawberries and jam in a small bowl and spread over the top of the cream cheese filling. Sprinkle dark chocolate chips over the top and refrigerate until ready to serve later that same day.
Makes 6 servings.
