This dinner takes everyone’s favorite food and turns it into a healthy and tasty alternative.

Ingredients

Cauliflower Pizza crust recipe (Try this recipe)
1/4 c. Marinara or pesto sauce
3 tsp olive oil
1/2 sliced small red bell pepper
1/3 c. broccoli florets
1/4 of a small red onion, cut into thin slices
1/3 c. thinly sliced mushrooms,
1/2 c. shredded mozzarella cheese
1/4 cup crumbled goat cheese

Directions

Make crust according to directions.

Add the broccoli, bell peppers and onions. Place onto an aluminum foil lined baking dish. Drizzle 2 tablespoon olive oil over vegetables. Lightly salt.

Roast vegetables at 450 degrees Fahrenheit for 8 to 10 minutes.

Heat 1 teaspoon olive oil in small skillet. Sauté mushrooms for 3-4 minutes in the oil. This can be done while vegetables are roasting. Set aside.

Cover your pizza dough with marinara or pesto sauce. Add a thin layer of mozzarella. Arrange the roasted vegetables and sautéed mushrooms over the cheese. Crumble goat cheese over vegetables.

Return the entire pizza to the hot oven to 5 to 7 minutes or until the cheese is bubbly and melted.

Allow pizza to cool slightly before slicing.

Serve with a green salad. Serves 2.
