Ingredients

1 tbsp. coconut oil
4 skinless, boneless chicken breasts cut into 1-inch strips
2 cups snow peas
2 cups broccoli florets
½ cup sliced onion
¼ cup teriyaki sauce
1 cup jicama, spiralized
2 medium carrots, spiralized
2 cups zucchini, spiralized

Directions

  1. On medium high fire, place a nonstick medium saucepan and heat oil.
  2. Sauté chicken until cooked or juices run clear.
  3. Stir in peas, broccoli, onion, teriyaki sauce, jicama, carrots and zucchini. Mix well and cook while covered for 5 minutes or until desired softness of noodles is reached. Stir occasionally.
  4. Divide equally into 4 bowls, serve and enjoy.
