Ingredients
1 tbsp. coconut oil
4 skinless, boneless chicken breasts cut into 1-inch strips
2 cups snow peas
2 cups broccoli florets
½ cup sliced onion
¼ cup teriyaki sauce
1 cup jicama, spiralized
2 medium carrots, spiralized
2 cups zucchini, spiralized
Directions
- On medium high fire, place a nonstick medium saucepan and heat oil.
- Sauté chicken until cooked or juices run clear.
- Stir in peas, broccoli, onion, teriyaki sauce, jicama, carrots and zucchini. Mix well and cook while covered for 5 minutes or until desired softness of noodles is reached. Stir occasionally.
- Divide equally into 4 bowls, serve and enjoy.
