These easy muffins are a wonderful way to start any day. They contain hemp seeds which are packed with vitamins and minerals, including vitamins A, B1, B2, D and E.

They also contain fiber, calcium and iron as well as the essential fatty acids omega 6 and omega 3.

Ingredients

1 C. All Purpose Flour
1 Tb. Cinnamon
1/2 C. Hemp Seed Protein Powder
1/4 C. Coconut Sugar
1/3 tsp. Cream of Tartar
1/2 tsp. Baking Powder
1/4 tsp. Salt
2 Tbs. Coconut, shredded
2 Bananas, large
1/4 C. Maple Syrup
1/4 C. Chocolate Hemp Seed Butter (recipe included)
1 tsp. Vanilla Extract
12 Vegan Marshmallows, chopped
Pam Cooking Spray

Directions

  1. Preheat Oven to 350 degrees Fahrenheit.
  2. Spray muffin pan or line with liners.
  3. In a mixing bowl mix all dry ingredients until mixed, except marshmallows.
  4. In a food processor mix all wet ingredients including the banana until well mixed and the banana is liquefied.
  5. Fold the wet ingredients carefully into the dry ingredients.
  6. Do not mix well, just get the dry ingredients wet.
  7. Gently fold in the marshmallows.
  8. Pour into muffin pan.
  9. Cook for 20 minutes or until a toothpick inserted comes out clean.
  10. Cool for five minutes in the pan, then remove to wire rack to cool completely.

Note: If you did not use muffin liners, you should remove from pan immediately to avoid sticking.

12 Servings.
