Ingredients
Salad:
2 c. frozen sweet corn kernels, prepared according to package directions
2 medium green bell peppers, diced
2 medium red bell peppers, diced
6 medium-sized tomatoes, diced
1 medium red onion, chopped
6 green onions, sliced
2 large avocados, diced
1 15-oz. can black beans, rinsed and drained
3 T. fresh lime juice
Sea salt and black pepper, to taste
3 T. fresh cilantro, chopped (optional)
Dressing:
2 large avocados, roughly chopped
½ c. water
3 T. extra virgin olive oil
¼ c. fresh lime juice
2 t. ground cumin
Sea salt and black pepper, to taste
Directions
- In a large serving bowl, combine corn, bell peppers, tomatoes, red onion, green onion, avocado, and black beans. Add fresh lime juice and season with salt and black pepper, to taste, and toss gently to combine. Set aside.
- To make dressing, add avocado, water, olive oil, fresh lime juice, and ground cumin to a blender and blend until smooth. Season with salt and black pepper, to taste, and pulse to combine.
- To serve, drizzle the avocado dressing over salad and toss lightly. Top with chopped cilantro, if desired, and enjoy!
