Ingredients
3 T. extra virgin olive oil
½ c. fresh lime juice
¼ c. fresh cilantro, chopped
2-3 cloves fresh garlic, crushed
1 T. honey, preferably local
2 t. ground cumin
1¼ t. sea salt
1 large mango, diced
1 large avocado, diced
2 green onions, green part only, thinly sliced
4 c. Romaine lettuce, cleaned and torn into bite-sized pieces
3 c. rotisserie chicken
1 medium red bell pepper, chopped
Directions
- To make the dressing, whisk olive oil, lime juice, cilantro, garlic, honey, cumin, and sea salt in a small bowl. Set aside.
- Combine the mango, avocado, and green onion in a medium bowl. Add 2 tablespoons of the cilantro-lime dressing and gently toss to combine. Set aside.
- To serve, top Romaine lettuce with rotisserie chicken, mango-avocado mixture, and chopped peppers. Drizzle with remaining dressing and serve immediately. Enjoy!
