This dish has a crunchy, nutty flavor. The fish is tender and moist thanks to the mayo and pesto.
Ingredients
2 six-oz white fish fillets like halibut or tilapia
3 tbsp pine nuts
2 tbsp Parmesan cheese
1/4 tsp finely chopped garlic clove
1 tsp basil pesto
1 1/2 tbsp mayonnaise or Greek yogurt
Directions
Turn oven on to 400 degrees Fahrenheit. Coat a large casserole dish with cooking spray.
Let fish come to room temperature while oven heats.
Finely dice the pine nuts and chop the garlic. Stir together the nuts, Parmesan cheese, garlic, basil pesto and the mayonnaise or yogurt.
Using a rubber spatula, evenly coat the crust mixture over the fish fillets. Use all the mixture.
Bake until fish is firm and crust is lightly browned, about 15 minutes.
Serve hot with sautéed green beans and a salad. Serves 2.
