When you are trying to meal prep and plan healthy meals, you probably want to freeze some of the meals ahead of time. This allows you to actually cook the meals, put it in the freezer, then just heat it up at dinner time. It really saves you a lot of time and energy during the week, but keeps you from going for the unhealthy, convenient options.
Breakfast Sandwiches
If you like to enjoy breakfast sandwiches in the morning, stop driving through McDonald’s! You can make a healthier version right at home and even freeze them so all you do is grab and go.
What you want to do first is break an egg into the different slots of a muffin pan. You will then put the muffin pan in the oven to cook the eggs.
Once they are cooked and cooled off, place them inside an English muffin with any meat or veggies you want with your sandwich, as well as a slice of cheese, Wrap them individually and freeze until you want to heat them up and eat them.
Baked Macaroni and Cheese
A meal that many people enjoy for comfort food is macaroni and cheese, but don’t always have time to make it from scratch. If you are trying to be healthier, you definitely want to make it from scratch and not use the box with processed powdered cheese.
A healthier version uses whole wheat or rice pasta, natural Cheddar and cottage cheese, cream, and some veggies like spinach or broccoli. Bake it beforehand, let it cool, then freeze the entire container.
Veggie Lasagna Rolls
Lasagna rolls are similar to a dish of lasagna, except each lasagna noodle is actually rolled up with the ingredients inside. You can make it even healthier by using all veggies instead of just cheese and meat sauce. The more veggies you use, the less cheese you are going to add.
Zucchini can also be used as the actual lasagna noodles, which further makes it a lot healthier. If you like a meat sauce, use ground turkey instead of beef, then add some spinach inside for extra nutrition.
Chicken, Veggies, and Rice Casserole
This option for a freezer meal has a lot of room for customizing it for your needs. You want to have cooked chicken, which you can cook ahead of time and save, or use a Rotisserie chicken from the store. You need a cream soup to add to the casserole, along with your choice of veggies and rice, preferably brown or wild rice. Add it to the casserole dish, bake, and freeze.
