Tip: For variation, try folding in some chocolate chips, raisins, or crushed peanuts into the batter before baking.

Ingredients

¾ c. sugar-free peanut butter
3 T. honey
2 eggs
1 t. vanilla extract
2 T. coconut flour

Directions

  1. Preheat oven to 350°F and line a large, rimmed baking sheet with parchment paper. Set aside.
  2. In a large bowl, whisk the peanut butter, honey, eggs, and vanilla extract until smooth. Add in the coconut flour and whisk until the batter is smooth and thick.
  3. Use a tablespoon to form the dough into cookies and arrange onto prepared baking sheet. Slightly flatten the tops of the cookies with your hands.
  4. Bake in preheated oven for 8 to 10 minutes or until cookies are slightly puffed and light golden-brown around the edges. Let the cookies cool for at least 10-15 minutes on the baking sheet before removing. Enjoy!
