Parathas Stuffed with Lamb (A tasty Indian feast!)

Preparation time: under 30 minutes
Cooking time: 1-2 hours, serving 4

Ingredients

Dough:

14 oz./ 400g flour (chapatti) (keep extra for dusting)
1 teaspoon salt
1 teaspoon ajwain seeds
5 teaspoons vegetable oil
1 tablespoon clarified butter

Lamb mince filling:

1 bay leaf
2 green cardamom pods
2 cm cinnamon stick
2 cloves
3 tablespoons vegetable oil
1 teaspoon cumin seeds
Large onion, finely chopped
1 tablespoon ginger and garlic paste
1 teaspoon salt
1 teaspoon smoked paprika
½ teaspoon turmeric powder
1 teaspoon red chili powder
½ teaspoon cumin powder
1 teaspoon coriander powder
2 cm piece peeled and finely chopped fresh ginger root
2 finely chopped green chilies
400g or 14oz lean lamb mince
100 g grated boiled potatoes
2 tablespoons fresh coriander chopped, leaves and stalks
Juice of half lemon
Salt and ground black pepper to taste

Pomegranate Raita

Ingredients

1 pomegranate, seeds removed
300g Greek yogurt
2½cm piece of fresh root ginger, chopped
1 chopped green chili
1 teaspoon cumin, ground and toasted
1 teaspoon salt
1 tsp sugar
1 tablespoon chopped coriander leaves

Directions
  1. Mix together carom seeds, flour, salt and oil and 25 ml water so you can make nice smooth dough. Cover and leave for 15 minutes to rest.
  2. Make filling by heating oil in large pan, adding the spices and then the cumin seeds. When it all starts cracking, lower the heat to medium for another 2 or 3 minutes. Add garlic paste and ginger, the ground spices, salt and chilies, stirring to around 3 minutes for spices to cook. Add lamb, cooking until dry and liquid has evaporated. Then add potatoes and stir for a minute thoroughly, sprinkling with lemon juice and coriander. Leave to cool down completely and then discard the whole spices. Divide up into 10 portions rolling into discs when they are cool enough.
  3. Take dough, making 10 balls. Make an indent in the dough, rotating and pressing the dough so that the hole is bigger than the lamb disc sizes. Place a lamb disc in the hole closing in the lamb disc on all sides, avoiding any cracks to avoid the stuffing coming out when rolled. Dust with flour, and roll out with 8 inch or 20 cm discs.
  4. Add to a heavy bottom cast iron pan, cooking for about 3 minutes on all sides, brushing with clarified butter togive an even color – keep them warm by loosely wrapping them in foil.

Raita:

Combine all ingredients, except some pomegranate seeds and some coriander leaves, mixing well. Sprinkle on top and keep in fridge until you serve, serving the parathas with delicious raita.
