Snack-time doesn’t get any easier than this! These are fantastic just as they are or rolled in chopped nuts or keto-friendly chocolate chips.

Ingredients

¼ c. natural peanut butter (unsweetened)
2 T. fine almond flour
3 T. monk fruit sweetener
½ t. pure vanilla extract

Directions

  1. Line a small baking sheet or large plate with a piece of parchment paper or Silpat baking mat.
  2. In a small bowl, combine peanut butter, almond flour, monk fruit sweetener, and vanilla. Mix until completely smooth and creamy.
  3. Form into 8 medium-sized balls, rolling in the palm of your hand and arrange on parchment-lined baking sheet. Place peanut butter balls in freezer for at least 30 minutes before serving.
  4. Recipe can be doubled or tripled, and leftover peanut butter balls can be stored in the freezer. Enjoy!
