Ingredients
4 medium sweet potatoes, sliced into ¼-inch rounds
1 15-oz. can black beans, drained and rinsed
½ c. frozen corn kernels, prepared according to package directions
½ c. medium or hot salsa
1 large avocado, chopped
1 medium jalapeno, sliced (optional)
¼ c. fresh cilantro, chopped
½ c. cheddar cheese, shredded
Directions
- Preheat oven to 400°F and lightly grease a large, rimmed baking sheet or line with parchment paper.
- Arrange the sweet potato rounds in a single layer on prepared baking sheet. Place in pre-heated oven and bake for 20-25 minutes, or until slightly browned and crispy.
- While sweet potatoes are roasting, prepare toppings and set aside.
- Remove baking tray from oven and cool slightly. To serve, arrange sweet potatoes on a large serving tray and top with black beans, corn, salsa, avocado, jalapeno, cilantro, and cheese. Enjoy!
