Ingredients

4 medium sweet potatoes, sliced into ¼-inch rounds
1 15-oz. can black beans, drained and rinsed
½ c. frozen corn kernels, prepared according to package directions
½ c. medium or hot salsa
1 large avocado, chopped
1 medium jalapeno, sliced (optional)
¼ c. fresh cilantro, chopped
½ c. cheddar cheese, shredded

Directions

  1. Preheat oven to 400°F and lightly grease a large, rimmed baking sheet or line with parchment paper.
  2. Arrange the sweet potato rounds in a single layer on prepared baking sheet. Place in pre-heated oven and bake for 20-25 minutes, or until slightly browned and crispy.
  3. While sweet potatoes are roasting, prepare toppings and set aside.
  4. Remove baking tray from oven and cool slightly. To serve, arrange sweet potatoes on a large serving tray and top with black beans, corn, salsa, avocado, jalapeno, cilantro, and cheese. Enjoy!
