Ingredients

6 tbsps. grits
1 cup water
1 pinch salt
½ cup diced Tasso ham
2 tbsps. diced green bell pepper
2 tbsps. diced onion
2 tbsps. olive oil
20 medium shrimp, peeled and deveined
¼ cup white wine
1 cup heavy whipping cream
1 tbsp. chopped green onion, green parts only
2 cups zucchini pasta noodles
Pepper and salt to taste

Directions

  1. In a saucepan on medium high fire, add water and a pinch of salt then bring to a boil. Slowly add grits while constantly stirring and continue cooking for around 20 minutes. Once grits are smooth and tender, lower fire to a simmer, put aside and keep warm.
  2. On medium high fire, place a nonstick skillet and fry Tasso ham until crispy. Add bell pepper and onion and cook for 4 minutes or until onion is translucent.
  3. Add olive oil, bell pepper and shrimp. Cook for under a minute while stirring lightly. Remove from pan and put aside.
  4. In same skillet, add wine and, with ladle, remove browned bits sticking to pan.
  5. Add cream and lower fire. Season with pepper and salt. Simmer for around 10 minutes or until thickened.
  6. On 2 plates, place a cup of zucchini pasta and top each with grits, 10 shrimps and sauce.
  7. Garnish with green onion, serve and enjoy.
