Tip: You can also serve this salmon with some simple stir-fried veggies or brown rice.

Ingredients

¼ c. white miso
1 1-inch ginger piece, finely grated
2-3 garlic cloves, minced
¼ c. fresh orange juice
¼ c. dry white wine
Sea salt and black pepper, to taste
6 6-oz. each salmon filets

Salad:

2 c. mixed salad greens, roughly chopped
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1 small red onion, thinly sliced
1 large avocado, chopped
2 T. fresh orange juice
1 T. apple cider vinegar
Sea salt and black pepper, to taste

Directions

  1. Preheat oven broiler to high and line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat.
  2. Place all ingredients for the salmon glaze in a small bowl and whisk until combined.
  3. Drench each salmon fillet into the glaze and arrange on prepared baking sheet. Generously season each fillet with salt and black pepper, to taste.
  4. Pour any remaining glaze over the salmon and place under the broiler for 5-6 minutes, or until the salmon develops a crispy golden crust and flakes easily with a fork.
  5. In the meantime, combine all ingredients for the salad in a large bowl and season with salt and black pepper, to taste. Toss to combine and serve with the warm, crispy salmon. Enjoy!
