Ingredients

6 cups parsnips, spiralized
2 cups sliced cremini mushrooms
2 tbsps. fresh sage, chopped
½ small onion, sliced
2 cups raw parsnips, chopped
1 cup filtered water, more if needed
¼ cup raw walnut butter
¼ cup nutritional yeast
1 tbsp. white miso
1 tsp. dried thyme
A few fresh sage leaves
2 garlic cloves
Salt to taste

Directions

  1. In a large salad bowl, arrange and mix well parsnip noodle, mushrooms, chopped sage and onion.
  2. In a food processor, puree parsnips, water, walnut butter, yeast, white miso, thyme, sage leaves, garlic cloves and salt and until smooth and creamy. You can add more water to make it thinner.
  3. Pour sauce over pasta, toss, mixing well.
  4. Serve and enjoy.
