Ingredients

2 lbs. small red potatoes, cleaned
1 lb. broccoli florets
2 T. extra virgin olive oil
3-4 cloves garlic, minced
1 t. fresh thyme leaves
Sea salt and black pepper, to taste
2 lbs. (1” thick) top sirloin steak, patted dry

Directions

  1. Set top oven rack to the second highest setting and pre-heat oven broiler to high. Lightly grease a large, rimmed baking sheet (or line it with parchment paper or a Silpat® baking mat). Set aside.
  2. Bring a large pot of water to boiling, and add red potatoes. Cook for 10-12 minutes or until just tender. Remove from heat and drain.
  3. Place potatoes and broccoli in large bowl and toss with olive oil, fresh garlic, and thyme leaves. Season with salt and black pepper, to taste, and spread into a single layer onto the prepared baking sheet.
  4. Season steak with salt and black pepper, to taste, and add to the baking sheet, keeping all ingredients in a single layer.
  5. Place baking sheet into oven and broil until the steak is browned and charred at the edges, about 3-4 minutes per side for medium-rare, or until desired doneness is reached.
  6. Remove baking sheet from oven and let steak rest for at least 5 minutes before slicing. Serve immediately with roasted vegetables. Enjoy!
