Ingredients
2 lbs. small red potatoes, cleaned
1 lb. broccoli florets
2 T. extra virgin olive oil
3-4 cloves garlic, minced
1 t. fresh thyme leaves
Sea salt and black pepper, to taste
2 lbs. (1” thick) top sirloin steak, patted dry
Directions
- Set top oven rack to the second highest setting and pre-heat oven broiler to high. Lightly grease a large, rimmed baking sheet (or line it with parchment paper or a Silpat® baking mat). Set aside.
- Bring a large pot of water to boiling, and add red potatoes. Cook for 10-12 minutes or until just tender. Remove from heat and drain.
- Place potatoes and broccoli in large bowl and toss with olive oil, fresh garlic, and thyme leaves. Season with salt and black pepper, to taste, and spread into a single layer onto the prepared baking sheet.
- Season steak with salt and black pepper, to taste, and add to the baking sheet, keeping all ingredients in a single layer.
- Place baking sheet into oven and broil until the steak is browned and charred at the edges, about 3-4 minutes per side for medium-rare, or until desired doneness is reached.
- Remove baking sheet from oven and let steak rest for at least 5 minutes before slicing. Serve immediately with roasted vegetables. Enjoy!
