Ingredients
2 T. extra virgin olive oil
4 medium red bell peppers, seeded chopped small
1 small red onion, chopped
3-4 garlic cloves, minced
1 lb. box penne pasta
1 t. crushed red pepper flakes
3 T. tomato paste
Sea salt and black pepper, to taste
6 oz. goat cheese, softened and broken into pieces
½ c. fresh basil, chopped
Directions
- Heat the olive oil in a large high-sided skillet over medium heat. Add bell peppers, onion, and garlic and cook for approximately 10-12 minutes, stirring occasionally, or until the onion and peppers are soft and golden.
- In the meantime, cook the pasta according to package directions until just al dente. Reserve 1/3 cup of the cooking liquid before draining the pasta and set aside.
- Add cooked pasta to skillet with the vegetables. Add red pepper flakes, tomato paste, and the reserved pasta cooking water. Season with salt and pepper, to taste, and stir to combine. Cook for 5-6 minutes, stirring occasionally, or until heated through.
- Remove from heat and stir in the goat cheese until melted. Serve immediately topped with fresh basil and enjoy!
