Ingredients

1 c. old-fashioned oats
1/2 c. coconut flakes, toasted
2/3 c. peanut butter, sugar free
½ c. ground flax seeds
½ c. cacao chips, unsweetened
1/3 c. honey, preferably local
1 T. chia seeds
1 t. vanilla extract

Directions

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.
  2. Place bowl in refrigerator for 1 hour to chill.
  3. Roll into balls approximately 1 inch in diameter. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
