Ingredients
1 ripe fuyu persimmon, diced
1 red bell pepper, diced
4 cups mixed greens
½ cup sweet potato, spiralized
2 fuyu persimmon, sliced
1 red bell pepper, julienned
3 tbsps. lime juice
1 tbsp. chili powder
A pinch of chipotle powder
Salt to taste
½ cup coarsely chopped pistachio
Directions
- In a salad bowl, mix and arrange sliced persimmons, bell pepper, mixed greens, and sweet potatoes. Set aside.
- In a food processor, puree diced persimmon, diced bell pepper, lime juice, chili powder, chipotle powder and salt until smooth and creamy.
- Pour over salad and toss, top with chopped pistachios.
- Serve and enjoy.
