Ingredients

1 ripe fuyu persimmon, diced
1 red bell pepper, diced
4 cups mixed greens
½ cup sweet potato, spiralized
2 fuyu persimmon, sliced
1 red bell pepper, julienned
3 tbsps. lime juice
1 tbsp. chili powder
A pinch of chipotle powder
Salt to taste
½ cup coarsely chopped pistachio

Directions

  1. In a salad bowl, mix and arrange sliced persimmons, bell pepper, mixed greens, and sweet potatoes. Set aside.
  2. In a food processor, puree diced persimmon, diced bell pepper, lime juice, chili powder, chipotle powder and salt until smooth and creamy.
  3. Pour over salad and toss, top with chopped pistachios.
  4. Serve and enjoy.
