Filling Ingredients
8 large peaches, cut into small chunks
1/3 c. white sugar
2 T. fresh lemon juice
2 t. all-purpose flour
1 t. kosher salt
1 t. nutmeg
1 t. cinnamon
½ t. allspice
1 t. vanilla extract
¼ cup packed brown sugar
Topping Ingredients
1 c. all-purpose flour
1/3 c. white sugar
1 t. salt
1 t. baking powder
½ c. unsalted butter, chilled
¼ c. heavy cream
¼ c. water
1 egg white, beaten with water
¼ c. white sugar
Serve with: ice cream or whipped cream, if desired
Directions
- Place top oven rack in the center position and preheat oven to 400°F. Grease an 8″ x 8” baking pan and set aside.
- Combine peaches, sugar, lemon juice, flour, salt, nutmeg, cinnamon, allspice, and vanilla extract in a large glass bowl. Transfer mixture to the prepared baking dish and spread into an even layer. Sprinkle brown sugar on top of peach mixture before placing pan in pre-heated oven to bake for 10 minutes.
- While baking, add flour, sugar, salt, and baking powder to a different bowl and stir to combine thoroughly.
- Remove chilled butter from refrigerator and chop into very small pieces with a sharp knife or grate using a cheese grater. Add chopped butter to the bowl and combine with dry ingredients with your fingers to create small pebble-sized pieces.
- Add heavy cream and water to the flour mixture and stir with a fork until all the dry ingredients are moist and somewhat sticky. Do not overwork dough.
- Remove pan from oven and spoon the moist flour mixture on the top, making sure the dough is the same thickness throughout so it cooks evenly.
- Return cobbler to oven and bake for another 10-15 minutes, or until the topping begins to brown. Remove from oven and brush the top with the egg white wash and sprinkle ¼ cup sugar on top. Return to oven for another 10-15 minutes, or until the top is evenly browned.
- Remove from oven and allow pan to cool slightly. Serve warm with your favorite ice cream or whipped cream, if desired.
