Filling Ingredients

8 large peaches, cut into small chunks
1/3 c. white sugar
2 T. fresh lemon juice
2 t. all-purpose flour
1 t. kosher salt
1 t. nutmeg
1 t. cinnamon
½ t. allspice
1 t. vanilla extract
¼ cup packed brown sugar

Topping Ingredients

1 c. all-purpose flour
1/3 c. white sugar
1 t. salt
1 t. baking powder
½ c. unsalted butter, chilled
¼ c. heavy cream
¼ c. water
1 egg white, beaten with water
¼ c. white sugar

Serve with: ice cream or whipped cream, if desired

Directions

  1. Place top oven rack in the center position and preheat oven to 400°F. Grease an 8″ x 8” baking pan and set aside.
  2. Combine peaches, sugar, lemon juice, flour, salt, nutmeg, cinnamon, allspice, and vanilla extract in a large glass bowl. Transfer mixture to the prepared baking dish and spread into an even layer. Sprinkle brown sugar on top of peach mixture before placing pan in pre-heated oven to bake for 10 minutes.
  3. While baking, add flour, sugar, salt, and baking powder to a different bowl and stir to combine thoroughly.
  4. Remove chilled butter from refrigerator and chop into very small pieces with a sharp knife or grate using a cheese grater. Add chopped butter to the bowl and combine with dry ingredients with your fingers to create small pebble-sized pieces.
  5. Add heavy cream and water to the flour mixture and stir with a fork until all the dry ingredients are moist and somewhat sticky. Do not overwork dough.
  6. Remove pan from oven and spoon the moist flour mixture on the top, making sure the dough is the same thickness throughout so it cooks evenly.
  7. Return cobbler to oven and bake for another 10-15 minutes, or until the topping begins to brown. Remove from oven and brush the top with the egg white wash and sprinkle ¼ cup sugar on top. Return to oven for another 10-15 minutes, or until the top is evenly browned.
  8. Remove from oven and allow pan to cool slightly. Serve warm with your favorite ice cream or whipped cream, if desired.
