Ingredients
2 medium English cucumbers, diced
2 15-oz. cans black beans, drained and rinsed
2½ c. frozen sweet corn, prepared according to package directions
2 medium red bell pepper, diced
2 c. cherry tomatoes, cut in half
½ c. fresh cilantro, chopped
2 large limes, cut into wedges
2 large avocados, diced
Sea salt and black pepper, to taste
1 head Romaine lettuce, trimmed and leaves kept whole
Directions
- Place the cucumber, black beans, corn, red pepper, cherry tomatoes, and chopped cilantro in a large bowl. Squeeze fresh juice from the lime into the bowl and stir to combine.
- Gently stir in the diced avocado and season with salt and black pepper, to taste.
- Scoop a heaping spoonful of the black bean mixture onto the whole Romaine lettuce leaves and wrap the edges to hold the filling inside. Serve immediately and enjoy!
