Ingredients

2 medium English cucumbers, diced
2 15-oz. cans black beans, drained and rinsed
2½ c. frozen sweet corn, prepared according to package directions
2 medium red bell pepper, diced
2 c. cherry tomatoes, cut in half
½ c. fresh cilantro, chopped
2 large limes, cut into wedges
2 large avocados, diced
Sea salt and black pepper, to taste
1 head Romaine lettuce, trimmed and leaves kept whole

Directions

  1. Place the cucumber, black beans, corn, red pepper, cherry tomatoes, and chopped cilantro in a large bowl. Squeeze fresh juice from the lime into the bowl and stir to combine.
  2. Gently stir in the diced avocado and season with salt and black pepper, to taste.
  3. Scoop a heaping spoonful of the black bean mixture onto the whole Romaine lettuce leaves and wrap the edges to hold the filling inside. Serve immediately and enjoy!
