Ingredients
2 15 oz. cans refried black beans
1 T. taco seasoning mix
3 large avocados, skin and pits removed
1 medium lime, juiced
Sea salt and black pepper, to taste
20 6” flour tortillas
2 c. 4-cheese Mexican blend, shredded
Directions
- Preheat oven to 400°F and line a large, rimmed baking sheet with parchment paper. Set aside.
- Add refried beans and taco seasoning to a medium bowl and stir to combine. In a separate bowl, combine avocado and lime juice with a fork until blended. Season with salt and black pepper, to taste. Set aside.
- Lay one tortilla on a clean, flat surface. Spread 1-2 tablespoons of the bean mixture down the center of the tortilla. Top with a thin layer of the mashed avocado mixture and some cheese. Roll tightly and place on baking sheet, seam side down. Repeat this process with the remaining tortillas and filling ingredients.
- Place filled tortillas in preheated oven and bake for 20-25 minutes or until golden brown. Remove from oven and serve immediately with Mexican quinoa (recipe in next post).
