Ingredients

2 15 oz. cans refried black beans
1 T. taco seasoning mix
3 large avocados, skin and pits removed
1 medium lime, juiced
Sea salt and black pepper, to taste
20 6” flour tortillas
2 c. 4-cheese Mexican blend, shredded

Directions

  1. Preheat oven to 400°F and line a large, rimmed baking sheet with parchment paper. Set aside.
  2. Add refried beans and taco seasoning to a medium bowl and stir to combine. In a separate bowl, combine avocado and lime juice with a fork until blended. Season with salt and black pepper, to taste. Set aside.
  3. Lay one tortilla on a clean, flat surface. Spread 1-2 tablespoons of the bean mixture down the center of the tortilla. Top with a thin layer of the mashed avocado mixture and some cheese. Roll tightly and place on baking sheet, seam side down. Repeat this process with the remaining tortillas and filling ingredients.
  4. Place filled tortillas in preheated oven and bake for 20-25 minutes or until golden brown. Remove from oven and serve immediately with Mexican quinoa (recipe in next post).
