Ingredients

1 bunch scallions, sliced
4 cups zucchini, spiralized
4 tbsps. raw shelled hemp seeds, divided
1 cup cherry tomatoes, halved
2 cups carrots
3 tbsps. fresh dill
2 tbsps. raw walnut butter
ΒΌ cup filtered water
1 lemon, juiced
Sea salt

Directions

  1. In a large bowl, mix scallions, zucchini, 3 tbsps. hemp seeds and tomatoes. Set aside.
  2. In a blender, puree dill, salt to taste, lemon juice, water, walnut butter and carrots. Add more water if the mixture is too thick.
  3. Pour pureed sauce into bowl of noodles and toss, mixing well.
  4. Sprinkle remaining hemp seeds.
  5. Serve and enjoy.
