Ingredients
1 bunch scallions, sliced
4 cups zucchini, spiralized
4 tbsps. raw shelled hemp seeds, divided
1 cup cherry tomatoes, halved
2 cups carrots
3 tbsps. fresh dill
2 tbsps. raw walnut butter
ΒΌ cup filtered water
1 lemon, juiced
Sea salt
Directions
- In a large bowl, mix scallions, zucchini, 3 tbsps. hemp seeds and tomatoes. Set aside.
- In a blender, puree dill, salt to taste, lemon juice, water, walnut butter and carrots. Add more water if the mixture is too thick.
- Pour pureed sauce into bowl of noodles and toss, mixing well.
- Sprinkle remaining hemp seeds.
- Serve and enjoy.
