Ingredients

½ cup raw kale leaves, shredded
2 cup zucchini, spiralized
1 tsp. dried herbs – optional
¼ cup roasted cashew
3 medjool dates
4 medium kiwis
2 big mangos, seed discarded
2 small dried figs

Directions

  1. In a salad bowl, place kale then top with zucchini noodles and sprinkle with dried herbs (if used). Set aside.
  2. In a food processor, grind the cashews to powder.
  3. Add dates, kiwis, mangos and figs, then puree to a smooth consistency.
  4. Pour over zucchini pasta, serve and enjoy.
